
Quick and easy. Make as a snack or dessert. Feel free to make changes to suit your preferences. You can use a different nut/seed butter, add nuts, seeds or dried fruit, etc. You could also roll them in shredded coconut.
If you add extra ingredients, you might have to adjust the maple syrup to make sure the balls don’t fall apart. Store in an airtight container and refrigerate for up to a week.

No Bake Energy Balls (or Bites)
Makes about 18-24 balls
1 cup rolled oats (gluten free, if necessary)
1/2 cup almond butter (creamy or crunchy)
1/3 cup mini vegan chocolate chips (or dried fruit or cacao nibs)
1/2 cup ground flaxseed meal
1/4 cup maple syrup
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
Combine all ingredients in a bowl. Stir/mix until they all come together. Use a scoop or mold/form batter into balls about one-inch large in diameter. Arrange balls on a baking sheet and allow to chill and set in the refrigerator (or freezer) for up to an hour.
