10 ounces organic sweet peas, fresh or frozen
Bring 3 cups of water to boil in a pot with steamer insert or use a collapsible basket. Reduce the heat to a brisk simmer, add peas. Be careful not to let the water touch the peas. For best nutrient retention, cover tightly and steam for 2-3 minutes, or until peas are tender and bright green.
Purée in a blender or food processor until very smooth. To adjust consistency, add 1 to 2 tablespoons of reserved steaming liquid to make the purée smoother, if needed.
