Marinated firm tofu makes a great plant-based substitute for feta in a Greek salad. The tofu doesn’t even need to be cooked! I know tofu often gets a bad rap and many of you are probably reading this with a healthy dose of suspicion—tofu as a substitute for feta, what???? I get it. Still, I dare you to try this. The recipe is simple, the marinated tofu is tasty, and it works really well in a Greek salad!
Marinated Tofu “Feta”
One package (about 16 ounces or 455 grams) firm (or extra-firm) tofu, drained
2-3 tablespoons fresh lemon juice
2 cloves garlic, crushed
1 teaspoon organo, dried
1 1/2 teaspoons salt, or to taste
1/4 teaspoon crushed red pepper
drizzle with olive oil, optional
Press tofu with paper towels or kitchen towel to squeeze out excess water. Crumble tofu, or, if preferred you can cut into 1/2-inch cubes. Combine the remaining ingredients in a bowl. Add tofu, toss and coat well. Allow tofu to marinate in the refrigerator for at least an hour or up to three days before serving.
